Prugnolo Gentile: 85% all the other red vines present in our vineyards: 15%
October, first week, manually harvested from our farm Le Caggiole vineyards.
After a separation and pressing process of the grapes combined with a pre-maceration process in cold, the grapes starts their alcoholic fermentation on peels for 10 days, with natural yeasts, within stainless steel tanks at monitored temperature. In this stage we have processed gradual assembling and a few fullings so that the extraction of polyphenol and tannins could not harm the young and strong nature of this wine, furthermore the fragrances and freshness characters of our territory grapes remain unchanged. Malolactic fermentation comes immediately after the alcoholic fermentation.
This wine must go through a small rest period and a few months in concrete-vitrified tanks maturation, then it is bottled in glass and let rest a little. We want to transmit our farming philosophy and the characteristics of Montepulciano’s land, which is perfect for best quality wine production, although we want to maintain the specific territorial value of our farm Le Caggiole.
It has a candid ruby coulour, with a violet reflection. It has strong perfumes that reminds of red fruits, cherry and some pepper marks, furthermore there is a strong flavour of Coscia di Monaca, which is Montepuciano local variety of prune and it is peculiar in all our wines. It has a strong taste and a long lasting persistence in mouth, it has a well-balanced sourness that maintains its fresh characteristic. Overall a well-balanced and well-rounded wine. It is a good wine for every occasion; it can be combined with first dishes, all kind of meat and cheese, even the less tasty ones. It can also be tasted without food and beyond meals. Best temperature to taste: 18°C. The bottle can be uncorked at any moment, but we suggest you to oxygenate it a few moments earlier, so that it can release its quality at best.

Our family has always preserved the secret of its Vin Santo, which does not lie in particular recipes, but in a natural and historical selection that nature itself carries out autonomously, when the best grapes are used, inside the small wooden casks where Vin Santo is born and matures: the caratello. It is inside these casks that, over the course of many decades, even centuries, the “Mother” is naturally selected, that is, a historical concentration of yeasts and organic matter, which determines the slow fermentation of the must from dried grapes, imprinting on the final product the true and distinctive peculiar characteristics, different and specific, never the same, in every vintage and in every farm. Our organic extra virgin olive oil is a liquid narrative of the Montepulciano hills. It begins with an early harvest in mid-October among our olive groves, where nature has spontaneously blended four historic local varieties: Frantoio, Leccino, Correggiolo, and Moraiolo. We harvest by hand, respecting the original proportions of the field, honoring the millenary wisdom passed down through generations. This "field blend" is immediately processed using advanced cold-extraction technology. This method seamlessly fuses the vegetal structure of Frantoio and the elegance of Leccino with the bold character of Correggiolo and the intense aromas of freshly cut grass typical of Moraiolo. The result is an extraordinarily balanced and sophisticated oil. Notes of artichoke, almond, and tomato dance in a sensory harmony that culminates in a slightly spicy finish—an unmistakable sign of a high concentration of polyphenols. More than just a condiment, this organic elixir is a powerhouse of antioxidants and vitamins, serving as a true guardian of daily well-being for the entire family.

We wanted to express the secrets of our Vecchja Vigna planted by Giuseppe Tiberini in 1918. Just as elderly people express wisdom of content in their stories, so old plants know how to make the concept of the territory reach our senses with great wisdom and fine depth, such to make the sip unique and full of absolute charm. We would like this vineyard to never die, we are as attached to it as to its mother and we reserve absolute attention and care for it, convinced that its udder will be able to give us the milk necessary to feed the need for richness of content and singular character that the evolved research consumer.

Our family wanted to express the secrets of the “Vigneto Fossatone”, a small vineyard of sand and stone where those native clones planted almost a century ago still live today. A vineyard in which our commitment is total, where we must have the utmost respect for its natural integrity and for its survival. Only by respecting this authenticity, consistency and balance that nature has given us in this small field, have we been able to obtain such a proud soul in this wine.

“Maturato” is a term that we have used to specify that is produced with on vine long-aged grapes, which must be harvested manually at the end of October. We produce it only in the best crops. The most used grapes are PULCINCULO’s (is the grape’s variety used for Montepulciano’s Vin Santo).

Our family wanted to express the secrets of the “Vigneto Campaccio”, a small clay and stone field, where the native clones that still live there were planted almost a century ago. A place where our work commitment is very important, totally addressed to the utmost respect and protection for its natural integrity and biological survival. Only by respecting this purity, rationality and harmony that nature has given us in this small vineyard, could we be able to have such an unrepeatable wine.

The continuous bond over time that unites wine with the concept of freedom has always fascinated our family. We have 7 generations of experience in individually harvesting our vineyards in Vino Nobile with their native vines, vinifying and maturing them separately, to mix them together only after 2 years, allowing each of them to arrive individually in our glass. This is for us the greatest respect for freedom of expression of the territory.
