Vino Nobile di Montepulciano DOCG Bio

The continuous bond over time that unites wine with the concept of freedom has always fascinated our family. We have 7 generations of experience in individually harvesting our vineyards in Vino Nobile with their native vines, vinifying and maturing them separately, to mix them together only after 2 years, allowing each of them to arrive individually in our glass. This is for us the greatest respect for freedom of expression of the territory.

Prugnolo Gentile 90% – Canaiolo Nero 5% – Mammolo 5%

HARVEST

October, first week, strictly harvested by hand from our vineyard suitable for Vino Nobile di Montepulciano in our farm Le Caggiole.

VINIFICATION

After a cold pre-maceration, our grapes are immediately destemmed and pressed, they are let ferment on peels with natural yeasts within stainless steel tank of 50 hl or 70 hl for 21 days, at a monitored temperature, with a last static dormancy. To foster the extraction the wine goes through many assembling and dèlestage phases. Malolactic fermentation occurs immediately after the alcoholic fermentation.

AGING

The aging of the wine took place by making it stand for different periods in barrels of 20, 25, 34 hl. of French oak, for a period of about 24 months, with the sole purpose of enhancing the territorial peculiarities of our Podere Le Caggiole. Subsequently, the wine was blended and then bottled and aging in glass, for a period of at least 6 months before being put on the market.

CHARACTERISTICS

This wine, which represents the traditional culture of our land, offers a precise character in which the style of our family is recognizable. It has a ruby color, tending to garnet, with a slight purplish edge. Aromas of ripe red fruit, with references to the Coscia di Monaca, the native plum of Montepulciano. Spices, tobacco and leather are perceptible. The taste is decisive, full and long in the mouth, with a good structure and a vein of soft tannin. Harmonious and elegant, it goes wonderfully with pasta dishes with savory sauces, spit-roasted, grilled and braised red meats, game, and intense or seasoned cheeses. It can also be tasted without food, to capture its intriguing aspects. The optimal serving temperature is 18 ° C. The bottle can also be uncorked at the moment, taking care to oxygenate the wine well without shaking it, better if opened a few hours before.
