Our family has always preserved the secret of its Vin Santo, which does not lie in particular recipes, but in a natural and historical selection that nature itself carries out autonomously, when the best grapes are used, inside the small wooden casks where Vin Santo is born and matures: the caratello. It is inside these casks that, over the course of many decades, even centuries, the “Mother” is naturally selected, that is, a historical concentration of yeasts and organic matter, which determines the slow fermentation of the must from dried grapes, imprinting on the final product the true and distinctive peculiar characteristics, different and specific, never the same, in every vintage and in every farm. Our historic Occhio di Pernice Mother is almost 200 years old.

HARVEST

Third week of September 1996, with strictly manual harvesting of grapes from the vineyards known as Maturato and Vigna del Sasso, where we selected Pulcinculo grapes in the former and Prugnolo Gentile grapes in the latter, for a total of only 30 quintals of grapes of the highest quality, immediately set to dry on reed racks.

VINIFICATION

From the finest bunches of Pulcinculo and Prugnolo Gentile, dried for 7 months on reed racks, we obtained, after a gentle pressing carried out in April 1997, about 700 liters of precious, highly concentrated must, which was placed into small 75-liter caratelli, in which it was subsequently elaborated by the “Historic Mother” through slow and repeated fermentations, in a process that lasted several years.

AGING

After sealing the caratelli at the end of April 1997, the wine matured in contact with the “Mother” for 20 very long years. In April 2017 the caratelli were finally opened, and the slow and precise work of nature gave us a dense and rich oily liquid, which we allowed to decant in a small stainless steel tank for several months. In January 2018 this precious liquid was bottled into no. 379 small numbered bottles of 375 ml.

CHARACTERISTCS

This Occhio di Pernice, extremely natural, can live for a very long time, for decades, and thanks to its very high concentrations, it can withstand being open for a long time. Served at a temperature of 14/16°C, it is suitable to accompany dry desserts, but it can also be enjoyed on its own or with snacks and appetizers, or used in the preparation of unique and special dishes. In every ancient Tuscan farmhouse it was impossible not to have good Vin Santo to offer, as a sign of friendship and hospitality, to those who came to visit, and every family of winemakers jealously guarded the treasure represented by the vinsantaia. Thus our Vin Santo di Montepulciano Occhio di Pernice, which we produce in only a few hundred small bottles, has a particular and unique character, deriving solely from the time that has passed in our land, and from the will that our family has always had to preserve unchanged the care and passion for this product.
