Vino Nobile di Montepulciano DOCG

Our family wanted to express the secrets of the “Vigneto Fossatone”, a small vineyard of sand and stone where those native clones planted almost a century ago still live today. A vineyard in which our commitment is total, where we must have the utmost respect for its natural integrity and for its survival. Only by respecting this authenticity, consistency and balance that nature has given us in this small field, have we been able to obtain such a proud soul in this wine.

GRAPES BLEND

Prugnolo Gentile: 90% – Canaiolo Nero: 5% – Mammolo. 5%

HARVEST

Second week of October 2018, with manual harvesting of the best grapes in our vineyard in Ha. 1,50 called Fossatone whose soils are composed mainly of sands and tuff mixed with stones of marl.

VINIFICATION

The harvested grapes were immediately taken to the cellar, destemmed and crushed and after a cold pre-maceration, placed to ferment on the skins with natural yeasts, in 50 hl tanks. at a controlled temperature for 44 days, with static quiescence in the final phase. Throughout the period, targeted punching down and special delestages were carried out to favor optimal extraction. The malolactic fermentation took place immediately after the alcoholic one.

AGING

The aging of the wine took place in 500-liter tonneaux of French oak from Allier and Vosges for about 42 months, without marking the wine with hints of wood, with the aim of enhancing the territorial peculiarities. Then the wine has been placed to rest in stainless steel vats, then bottled and placed in aging in glass, before being put on the market.

CHARACTERISTICS

This wine faithfully represents the typicality of its territory and of the old vines in which its grapes were born, where the particular exposure to the sun and winds and the composition of its soil, give a particular softness of body and elegance. It has an intense ruby color tending to garnet. the aromas are of ripe red fruit of the forest, with the particular reference to the Coscia di Monaca, the native plum of Montepulciano, as well as aromas of spices, tobacco and pepper. The taste is full and remains long in the mouth, revealing itself to be balanced and enveloping, with soft tannins and the right acidity. It goes wonderfully with red meats, both on the spit and grilled, with game and structured cheeses, but it can be pleasantly drunk even without accompanying it with food. To uncork the bottle at the moment of consumption, care must be taken to oxygenate the wine well, even in a decanter but without shaking it too much. However, we recommend opening it at least 3 or 4 hours before the service
