According to our family, a wine like the Rosso di Montepulciano must also have a clean nature, that evokes those vineyards capable of offering authentic wines as was the spirit of our founder Giuseppe Tiberini, nicknamed Sabrèo, “the sober”.

After a soft separation and pressing process, with also a cold pre-maceration process, grapes start their alcoholic and natural yeasts maturation on peels for a 12 days period with many different fulling cycles, within monitored temperature stainless steel tank 50hl each. The malolactic fermentation occurs immediately after the alcoholic fermentation
After fermentation processes and a static rest period, the wine is poured in small controlled-temperature stainless steel vat. After a last six months rest in glass the wine is ready for the market.
We wanted our Rosso di Montepulciano respecting the maximum duties of winemakers attentive to the territory, cultivating it without taking anything beyond what the territory itself has given us. In this way we can offer a wine representative of the traditional characteristics, with its own particular character, in which the style of our family is recognizable. It has an intense ruby color, tending to purplish. The aromas are of red fruit, currant and cherry and you can feel the particular reference to the Coscia di Monaca, the native plum of Montepulciano, which is characteristic of each of our wines. The taste is harmonious and decisive, full and long in the mouth, with a good structure and a pleasant freshness guaranteed by the right acidity. It is a wine that goes wonderfully with pasta dishes, perhaps with meat sauces and boiled meats, or with white and red meats made roasted, baked or grilled and with many cheeses. It can also be tasted without having to combine it with food, to capture all its qualities of elegance and freshness. The optimal serving temperature is 16 ° C. The bottle can be uncorked at the moment, taking care to oxygenate the wine, even if it is always better to open it a little before consumption.

Our family has always preserved the secret of its Vin Santo, which does not lie in particular recipes, but in a natural and historical selection that nature itself carries out autonomously, when the best grapes are used, inside the small wooden casks where Vin Santo is born and matures: the caratello. It is inside these casks that, over the course of many decades, even centuries, the “Mother” is naturally selected, that is, a historical concentration of yeasts and organic matter, which determines the slow fermentation of the must from dried grapes, imprinting on the final product the true and distinctive peculiar characteristics, different and specific, never the same, in every vintage and in every farm. Our family wanted to express the secrets of the “Vigneto Campaccio”, a small clay and stone field, where the native clones that still live there were planted almost a century ago. A place where our work commitment is very important, totally addressed to the utmost respect and protection for its natural integrity and biological survival. Only by respecting this purity, rationality and harmony that nature has given us in this small vineyard, could we be able to have such an unrepeatable wine.

The continuous bond over time that unites wine with the concept of freedom has always fascinated our family. We have 7 generations of experience in individually harvesting our vineyards in Vino Nobile with their native vines, vinifying and maturing them separately, to mix them together only after 2 years, allowing each of them to arrive individually in our glass. This is for us the greatest respect for freedom of expression of the territory.

The Prugnolo Gentile, the Sangiovese that we find in Montepulciano, is a stateless person of our territory, in every variance of terrain and microclimate it assumes its nationality, therefore its unique character from the land in which it is planted. in this way a twig, or "Virgulto" of the large tree of the Sangiovese family, which is Prugnolo Gentile, is born and grows. Thus our experience of 7 generations has taught us to take the most beautiful and most suitable bunches of Prugnolo Gentile from our vineyards of Podere Le Caggiole to be mixed together. We wanted to express the secrets of our Vecchja Vigna planted by Giuseppe Tiberini in 1918. Just as elderly people express wisdom of content in their stories, so old plants know how to make the concept of the territory reach our senses with great wisdom and fine depth, such to make the sip unique and full of absolute charm. We would like this vineyard to never die, we are as attached to it as to its mother and we reserve absolute attention and care for it, convinced that its udder will be able to give us the milk necessary to feed the need for richness of content and singular character that the evolved research consumer.

“Maturato” is a term that we have used to specify that is produced with on vine long-aged grapes, which must be harvested manually at the end of October. We produce it only in the best crops. The most used grapes are PULCINCULO’s (is the grape’s variety used for Montepulciano’s Vin Santo).

Our family wanted to express the secrets of the “Vigneto Fossatone”, a small vineyard of sand and stone where those native clones planted almost a century ago still live today. A vineyard in which our commitment is total, where we must have the utmost respect for its natural integrity and for its survival. Only by respecting this authenticity, consistency and balance that nature has given us in this small field, have we been able to obtain such a proud soul in this wine.
