Virgulto
Toscana IGT Rosso
The Prugnolo Gentile, the Sangiovese that we find in Montepulciano, is a stateless person of our territory, in every variance of terrain and microclimate it assumes its nationality, therefore its unique character from the land in which it is planted. in this way a twig, or “Virgulto” of the large tree of the Sangiovese family, which is Prugnolo Gentile, is born and grows. Thus our experience of 7 generations has taught us to take the most beautiful and most suitable bunches of Prugnolo Gentile from our vineyards of Podere Le Caggiole to be mixed together. The result is the Virgulto, a wine capable of telling diversity, distinction and individuality.
Prugnolo Gentile: 100%
Third week of October , with manual harvesting of the grapes from our vineyards, where we have selected in the historically most suitable parts, only 60 Ql. of grapes of the best quality.
The fermentation takes place on the skins with natural yeasts in a single stainless steel tank of 50 hl temperature-controlled for 44 days, during which we operated soft punching and delestages, with particular frequency variations. The malolactic fermentation took place immediately after the alcoholic one.
The aging of the wine took place by making it stand, for different periods, in 500-liter tonneaux of French oak from Allier and Vosges, for more than 40 months. Following a period of rest in steel has been bottled on 03.01.2018 and placed in refining in the glass before its commercialization.
We used this name, wanting to propose a wine representative of the tradition and experience that our family has gained on our land, which would offer the consumer character and power while remaining pleasant and intriguing, but wanting to enhance the characteristics of the historically leading vine in the land of Montepulciano: the Gentile Prugnolo.
It is a wine that pairs wonderfully with furred game, spit-roasted and grilled red meats, and very aged cheeses with strong flavor. It is excellent to taste it without food, to understand why it is so different, so mysterious, so fickle, but which is granted to those who aspire to his soul as well as to his body, which will belong to the one who will discover it with grace and delicacy, thus revealing its condensation of a territory, of culture, of lifestyle. The optimal serving temperature is 18/20 ° C. To uncork the bottle on the spot, you need to oxygenate the wine well without shaking it, better to open it 3 or 4 hours before consumption.

Vinsanto di Montepulciano
Occhio di Pernice D.O.C.
Our family has always preserved the secret of its Vin Santo, which does not lie in particular recipes, but in a natural and historical selection that nature itself carries out autonomously, when the best grapes are used, inside the small wooden casks where Vin Santo is born and matures: the caratello. It is inside these casks that, over the course of many decades, even centuries, the “Mother” is naturally selected, that is, a historical concentration of yeasts and organic matter, which determines the slow fermentation of the must from dried grapes, imprinting on the final product the true and distinctive peculiar characteristics, different and specific, never the same, in every vintage and in every farm. Our historic Occhio di Pernice Mother is almost 200 years old.Vigne Vecchie di Famiglia

Organic Extra Virgin Olive Oil
Organic Extra Virgin Olive Oil
Our organic extra virgin olive oil is a liquid narrative of the Montepulciano hills. It begins with an early harvest in mid-October among our olive groves, where nature has spontaneously blended four historic local varieties: Frantoio, Leccino, Correggiolo, and Moraiolo. We harvest by hand, respecting the original proportions of the field, honoring the millenary wisdom passed down through generations. This "field blend" is immediately processed using advanced cold-extraction technology. This method seamlessly fuses the vegetal structure of Frantoio and the elegance of Leccino with the bold character of Correggiolo and the intense aromas of freshly cut grass typical of Moraiolo. The result is an extraordinarily balanced and sophisticated oil. Notes of artichoke, almond, and tomato dance in a sensory harmony that culminates in a slightly spicy finish—an unmistakable sign of a high concentration of polyphenols. More than just a condiment, this organic elixir is a powerhouse of antioxidants and vitamins, serving as a true guardian of daily well-being for the entire family.
