October 2015, second week, strictly harvested by hand from our 12.70 hectare of vineyard suitable for Vino Nobile di Montepulciano in our farm Le Caggiole.
After a cold pre-maceration, our grapes are immediately destemmed and pressed, they are let ferment on peels with natural yeasts within stainless steel tank of 50 hl or 70 hl for 30 days, at a monitored temperature, with a last static dormancy. To foster the extraction of its territorial characteristics, the wine goes through many assembling and dèlestage phases. Malolactic fermentation occurs immediately after the alcoholic fermentation.
Wine’s maturation occurs in a period of approximately 24 months with different phases within 500 L. French Allier and Vosges durmast tonneaux and within 20-25-34 hl barrels made of French and Slavonija (region in Croatia) durmast. The purpose of this process is to accent the specific characteristics of our territory farmLe Caggiole. Later, different vineyards wines were assembled and bottled the 15/05/2018. After a six months aging in glass, the wine was commercialized.

This wine fully represents the traditional culture of our land and has a specific character, which represents our territory farm Le Caggiole. It has a ruby and ruby red colour, with a light violet mark; its perfumes remind red ripe fruits and in particular the Coscia di Monaca, the peculiar Montepulciano’s prune variety. Spices are noticeable, as tobacco and leather. Its taste is strong and firm, full and long-lasting in mouth, with a good structure and a bit of soft tannin. The wine is overally harmonic, it can be perfectly combined with pasta dishes with tasty tomato sauces; perfect with red meats cooked on the spit, on ember or braised, also perfect with wild game and aged cheese. It can also be tasted without food, so that every and each involving characteristic can be fully tasted. Best temperature to serve: 18-20°C. The bottle can be uncorked at any moment, although it must be oxygenated well without shaking it: better if opened a few hours before the consumption.
