White Wine

MATURATO - Tuscany I.G.T. 2015, white wine

“Maturato” is a term that we have used to specify that is produced with on vine long-aged grapes, which must be harvested manually at the end of October. We produce it only in the best crops. The most used grapes are PULCINCULO’s (is the grape’s variety used for Montepulciano’s Vin Santo).

GRAPES BLEND:
Pulcinculo: 95%
Vermentino: 5%

HARVEST:
October 2015, fourth week, manually harvested. The grapes come from a 1.30 hectare vineyard located in a well exposed and ventilated crest in our farm, Le Caggiole. Grapevines produce grapes with difficulty due to the harshness of the soil, a mixture of sands, tuff, clays and marl. Therefore, grapes have a peculiar concentration and character.

VINIFICATION:
The grapes harvested are immediately press at low temperatures. The must then rest in cold temperatures for many hours. Then we have a natural-yeasts fermentation for a long period and a specific routine for this peculiar variety of grape, in little stainless and monitored temperature steel tanks for the first period, then in small concrete tanks for the second one.       

AGING:
The wine is aged in contact with lies for different periods and at different temperatures, in steel and concrete basins. After a rest in steel basins it was bottled in date 02/12/17 and then rest in glass before it was commercialized.

CHARACTERISTICS: 
We want this wine to be authentic and coherent to the primary grape variety it comes from: this wine reflects traditional farming value made of immutable timings and virtuous patience through we try to valorize our territory authentic values, its traditions and history.
The hard and enjoyable work gives birth to an involving wine with varietal perfumes, with a compact and long-lasting flavour, balanced and harmonic, always intense, with a vigourous expression of a classic seasoned mark and a toasted almond mark, both peculiar characteristics of the Pulcinculo variety.
It can be well combined with either fish or meat tasty dishes, to peculiar appetizer and to pasta without tomato sauce or with strong flavour cheese. It can also be appreciated without food, with friends or reading a book. Best temperature to taste: 14-16°C.
The wine bottle can be uncorked any time, although it must be well oxygenated and not shake too much. It is a better choice to open the bottle few hours earlier.
