October 2019, first week. Harvested by hand of our grapes from the farm Le Caggiole.
This stage consists in a slow alcoholic fermentation with natural yeasts for 30 days after a mild and cold grapes pressing, within concrete tanks at monitored temperature. We pay particular attention to the fermentation temperatures in this stage: we use low-level temperatures in order to protect our territory grapes fragrance and freshness. Furthermore, due to the complexity of these grapes, we make remuages for wine’s lies.
This kind of wine naturally reaches its clearness and balance after a short period of static rest and maturation in stainless steel tanks. It is then bottled, so it can age and sharpen itself for a specific period.
Alcohol: 13.38% vol.
Total acidity gr/L: 5.72
Volatile acidity (via enzyme): 0.32
Sulphuric anhydride mg/L: 31
With this wine, we want to pass down our uncompromising farming philosophy and Montepulciano’s typical characteristics, which is a land of best quality red wines, although it also had great quality white wines in the past. With our wines, we want to keep the peculiar territory qualities of Le Caggiole.
“Cambio” has an intense pale yellow color with a fine golden reflex.
The aroma is clear, this specific grapes blending resembles exotic fruits, although it maintains the typical characteristics of the local vine variety.
It has a pleasing flavor and a good persistence in mouth; it is sustained by a fair sourness, which maintains his fresh and well-balanced character. Once it is poured in a glass has a delicate gustative evolution. It is a good wine for many circumstances: it tastes good with pasta and fish dishes, with white meat and with various kind of cheese. This wine can be tasted without food, as a cocktail or aperitif. Best temperature to serve: 10-12°C. This wine bottle can be uncorked when consumed.
